INSTRUCTIONS
Dough: Combine all the dry ingredients in a bowl and mix well. Gradually add the water while kneading until the dough comes together. Add the oil and continue kneading until the dough is smooth, elastic, and no longer sticky.
Shaping:ย Divide the dough into 12 equal portions. Cover and let the dough rest for 30 minutes. Roll each portion into a thin circle, then trim using a 20 cm (8-inch) plate or cutter.
Cooking: Cook the tortilla on a preheated pan until bubbles begin to form on the surface. Flip and cook the other side until puffed and fully cooked. Remove from the pan and wrap in a clean kitchen towel to keep the tortillas soft and pliable.
Blending: Transfer the curds to a blender or food processor. Add the salt and butter (if using).ย Blend until completely smooth and creamyย for a texture closer to store-bought cream cheese.
Storage:ย Once completely cooled, place the tortillas in an airtight bag or container and store them in the freezer.
Serving:ย Allow the tortillas to come to room temperature before using so they become soft and flexible again. During cooling and before serving, keep the tortillas stacked and covered with a clean kitchen towel to prevent them from drying out. This helps maintain their soft, pliable texture and makes them easier to fold and use.

Adonan:ย Campurkan semua bahan kering dalam sebuah wadah dan aduk hingga rata. Tambahkan air sedikit demi sedikit sambil diuleni hingga adonan mulai menyatu. Masukkan minyak, lalu lanjutkan menguleni hingga adonan kalis, elastis, dan tidak lagi lengket di tangan.
Pembentukan: Bagi adonan menjadi 12 bagian sama besar. Tutup adonan dan istirahatkan selama 30 menit. Giling setiap adonan hingga tipis berbentuk lingkaran, lalu cetak menggunakan piring atau cetakan berdiameter 20 cm.
Memasak:ย Masak tortilla di atas pan yang telah dipanaskan hingga muncul gelembung di permukaannya. Balik tortilla, lalu masak sisi lainnya hingga bergelembung dan matang. Angkat dan bungkus dengan kain bersih agar tetap lembut dan lentur.
Penyimpanan:ย Setelah dingin sepenuhnya, simpan tortilla dalam wadah atau kantong plastik tertutup rapat, lalu bekukan di dalam freezer.
Penyajian:ย Biarkan tortilla mencapai suhu ruang sebelum digunakan agar kembali lembut dan lentur. Selama proses pendinginan maupun sebelum disajikan, susun tortilla bertumpuk dan tutup dengan kain bersih agar tidak kehilangan kelembapan. Cara ini membantu menjaga teksturnya tetap lembut, tidak kering, dan tetap lentur saat digunakan.
