Dough
200 ml milk (susu)
3 g instant yeast (ragi instan)
65 g granulated sugar (gula pasir)
1 tsp vanilla extract
2 eggs (telur)
500 g bread flour (tepung protein tinggi)
1/2 tsp salt (garam)
70 g unsalted butter (mentega tawar)
Topping Cheese
170 g cream cheese
25 g sugar powder
1 egg yolk (kuning telur)
50 g whipping cream
Topping Blueberry
125 g fresh blueberry
blueberry jam - optional (selai blueberry)
Crumble
30 g cold butter (mentega tawar dingin)
15 g sugar powder (sugar powder)
50 g low protein flour (tepung terigu protein rendah)
Egg Wash
1 egg yolk (kuning telur)

Dough: Activate the yeast by combining the milk and sugar, then let it sit for a few minutes until foamy. Combine the eggs, vanilla extract, and flour. Knead until partially combined, then add the butter and salt. Continue kneading until the dough becomes soft and elastic. Cover the dough and let it rise for about 1 hour, or until doubled in size.
Crumble: Mix all ingredients until crumbly. Chill in the refrigerator for at least 30 minutes before using.
Cheese Topping: Whisk or mix all ingredients until smooth, then transfer into a piping bag.
Shaping: Divide the dough into 8 equal portions. Shape into balls and flatten slightly. Press the center using the bottom of a glass or your hands to create an indentation. Brush the edges with egg yolk. Pipe the cheese topping into the center, add fresh blueberries on top, then sprinkle with crumble.
Baking: Bake at 180°C for about 15–18 minutes until golden brown.

Adonan: Aktifkan ragi dengan mencampurkan susu dan gula, lalu diamkan beberapa menit hingga berbusa. Campurkan telur, vanilla, dan tepung terigu. Uleni hingga setengah kalis, lalu masukkan butter dan garam. Lanjut uleni hingga adonan lembut dan elastis. Tutup adonan dan diamkan selama sekitar 1 jam hingga mengembang dua kali lipat.
Crumble:Â Campurkan semua bahan hingga bertekstur butiran kasar. Simpan di kulkas minimal 30 menit sebelum digunakan.
Cheese Topping:Â Campurkan semua bahan menggunakan whisk atau mixer hingga halus, lalu masukkan ke dalam piping bag.
Pembentukan: Bagi adonan menjadi 8 bagian sama besar. Bulatkan lalu pipihkan. Tekan bagian tengah adonan menggunakan dasar gelas atau tangan hingga membentuk cekungan. Oles bagian pinggir dengan kuning telur. Isi bagian tengah dengan topping cheese, tambahkan blueberry segar di atasnya, lalu taburi crumble.
Pemanggangan: Panggang di oven suhu 180°C selama sekitar 15–18 menit hingga matang dan golden brown.
